Can we consider denied entry as discrimination in all respects?

YES! The moment I do not say whether or not I have had the vaccine, but declare: 'I have chosen not to have the green mark with me': it is a political choice; if you do not let me in, you are not letting me in for political reasons, and so you are discriminating against me from a political standpoint, which, running an establishment open to the public, you cannot do! Exactly as you could not say: 'homosexuals cannot enter' or 'people of colour' etc...
It is discrimination on trivial grounds.
There is also the aspect of religious discrimination, because many Christian people choose not to get vaccinated due to the use of aborted foetal cells in the creation/development of these vaccines.
